Chicken Curry Salad
Servings: N/A Complexity: Very Easy
Total Time: 20 minutes
This is a summertime staple at our house. My hubby likes it with buttermilk biscuits.
Creamy Dijon-Dill Potato Salad
Servings: Group Complexity: Easy
Total Time: Prep Time: 15 minutes Cook Time: 25 minutes
I guess I'm sticking to the classic salads for my BBQ, and there's nothing more classic BBQ than a good home-style potato salad. Mine is rich in flavor, but still light and fresh, thanks in large part to the dill and lemon juice. The vibrant green dill also does wonders for the look of the salad. There's nothing worse than mushy, mealy potatoes, so make sure to start your spuds off in cold water and to cook them whole.
Crunchy Chinese Salad
Servings: 6 Complexity: Very Easy
Total Time: 35 minutes
This is an excellent salad, one of our favorites, and works well for a crowd.
Fiesta Quinoa Salad

This salad is delicious and nutritious. The recipe is flexible, so add or change the ingredients to what you like. Add sliced cooked chicken or grilled steak, for a main dish salad. Above all, have fun!

This wonderful eggplant salad is eaten in Greece, but originated in Turkey. The blend of flavors is subtle and unexpectedly delicious.
Mexican Salad

A crowd pleaser, to be sure. On a warm summer night you can't go wrong. Pass the margaritas!
Tuscan White Bean Shrimp Salad
Servings: 4 Complexity: Easy
Total Time: 30 minutes
Inspired by the simple bean salads served in Tuscany on warm summer days, this one is redolent of olive oil, fresh vegetables, and shrimp – and makes a terrific dish for weekend company, since you can prepare it ahead of time and serve it chilled or at room temperature.
