Chicken Curry

This has been a long-standing favorite at our house. It's quick, easy, and delicious.

Very Easy

Total Time:
20 minutes

Ingredients:
2 Tbsp. olive oil
1/4 cup minced onion (or shallot)
1/4 tsp. salt
4 tsp. curry powder (Madras is good)
1 can cream of mushroom soup
1/4 cup milk
1 cup sour cream
2 cups chopped cooked chicken

Directions:
Sauté minced onion in oil until soft. Add salt and curry and cook 1 minute more. Add soup and milk; heat and stir. Add sour cream and chicken; heat and stir, but do not boil. Add more milk if too thick.

Serve with hot rice, chopped tart apple and peanuts.
