Southwest Chicken Lasagna

Most recipes you see like this use tortillas instead of lasagna noodles. Try this and see what you think. . .

Ingredients:
8 lasagna noodles
1 pound coarsely ground chicken or turkey
1 egg
2 cups low-fat ricotta or cottage cheese
1 cup (4-oz.) cheddar or jack cheese, shredded
1 can (15-oz.) pinto beans, drained and coarsely mashed
1/2 cup water
1 tsp. cumin
1/2 tsp. garlic powder
1 cup prepared picante sauce, divided in two
1 small can chopped green chilies
1 pkg. taco seasoning
2 cups crushed, stewed tomatoes
Directions:
Mix egg and both cheeses in bowl. Sauté chicken in skillet until cooked. Drain any liquid or fat and return to pan. Add coarsely mashed beans, water, cumin, garlic powder, 1/2 cup picante sauce, green chilis and taco seasoning. Add the other 1/2 cup picante sauce to stewed tomatoes. Cook and drain the noodles. In greased 9x13-inch pan, layer as follows:
1/2 tomato sauce
1/2 noodles
1/2 chicken/bean mixture
1/2 cheese mixture
Repeat.
COVER with foil and bake at 350 degrees for one hour or until done.
